good but will make some modifications next time, June 15, 2008

"The muffins turned out to be decent. I will make 18 instead of 12 next time as the muffin cups were very full. They also took a lot longer to bake than the recipe said. I added 1/2 cup of water for the liquid but will add 1/2 cup apple sauce next time. I would prefer them to be a little sweeter. I might try some shredded carrots next time too for a little sweetness. Let them cool in the pan a little before trying to remove them. They are very soft. Also, make sure you follow the instructions and grease the pan very well."
