"They are a light, almost crispy, yet slightly chewy cookie. Lemony and not too sweet---just right. I didn't have quite enough vegan margerine, so I had to use about 1/4 cup Spectrum vegetable shortening, and they came out great. Super easy to make too. Thanks so much for this recipe!"
