"One of my personal favorite dishes and I only made a few modifications. I saute in red wine vinegar instead of oil, decreased rice to one cup, upped the spices to 2 tsp and no garlic because my wife hates the smell of garlic. I usually make this at least once a week and throw some red beans in the mix so that I may have a complete meal."
