"So pleased with this recipe..I'm giving 4 stars because I made a couple adjustments. I didn't have kelp powder, which I'd like to try it with, but it still came out fabulous. I didn't freeze and press my tofu, but admittedly it may have frozen in my fridge and contributed to the texture; I squeezed it in pieces over the sink, and it turned out pretty dry (damp) and crumbly. I used tamari soy sauce. I didn't feel like cutting any veggies (which would have made it even better). I used a sprinkle of onion and garlic powder. Trying to replicate my favorite Whole Foods tofu turkey salad recipe, I added about a half tablespoon of vegetarian liquid smoke, I think this makes it very very close to what they have! A sprinkling of parsley, really for color, and a little pickle juice.. I tasted it before adding the vegan mayo, and I could have ate it then, and figured the mayo was just a binder, as the flavor was already killer! I added only 3 tbsp of mayo for more of a dry salad, I think 1/2 cup would be too much... and after tasting again, added 1 more half tbsp of tamari soy sauce (2.5 total). Freakin amazing. I will try it with lemon pepper sometime. Does not taste like tuna, but is still very very delicious, and the texture is very close. Took me about 5-7 mins from start to finish, even with adjustments. Mmmm, mmmm good."
