"I use this a lot, even though I found the muffins to be TOO moist. It tastes wonderful and it is versatile. 1. I use it as a crust for cheesecake. 2. To achieve a more doughnut-like texture I drop 1 Tbsp of batter into each quadrant of a round Belgian Waffle maker. The result is crunchy outside and light inside like a doughnut. Top with ganache ( 1/2 c warm cream, 1 oz melted unsweetened chocolate, powdered sweetener to taste) or sweetened, whipped cream cheese. The original topping works as well. 3. Drop teaspoonfuls on a lined baking sheet to make cookies. Bake at 350 degrees for 5 minutes."
