Yummy! Quick and Healthy too!,

"My whole family loved these! My two teenage daughters don't care for their school lunches, so they need to have a "stick to your ribs" breakfast. But, the quick meals on the market are usually heavy on fat, sodium and MSG as well as preservatives, so I wanted something that was fast for them, yet healthy for their growing bodies. This fits the bill, combining both good proteins and carbs for long lasting energy!
I kept the meat out so I could add bacon to some and soy burger to others and leave a few meatless. I used a black bean and corn salsa that is a little more spicy, which was delicious with the pepper jack cheese.
I would also recommend using cooked shredded chicken for a quick lunch or dinners (or after school snack for that matter), rice and beans or chips and guacomole or salsa would be wonderful as a side dish.
I think next time I will double or triple the batch and have a few weeks worth as we use 4-6 of them each morning. ENJOY!!!!"
