"I like the simplicity of this recipe, although I would like to find a way to reduce the sugar content. I replaced the milk with coconut milk for a flavor variation and am pleased with the result! Prior to hand-mixing in the egg-whites I wasn't too sure about the consistency - wondering how I was going to "pour" the mix into the cake pans. Once the eggs were folded in the batter, though, the mixture was transformed into a light fluffy mix that was readily poured into the pans."
