"I am always on the lookout for recipes that can be made in 15 minutes or less. This one definitely works in that time frame. It was really flavorful. Even my "what-no-meat?" 13 year old son liked it; his clean plate would have spoken for him even if he hadn't told me so!
I paired this dish with quick cooking brown rice. I tried adding cauliflower, as well, and it came out really well---it would probably work with most fresh (microwaved or steamed) or frozen vegetables.
I loved the idea of adding chutney. I would never have thought of that, since I think of chutney as a condiment, but it really does add a complex flavor and doesn't make it sweet."
