"I found it hard to imagine a head of cauliflower being transformed into rice-sized grains, but I took a shot and used a hand grater tonight. I took a quarter of a head and grated it into a bowl, microwaved it for the 6 minutes specified with no water added, and low-and-behold: a side dish that worked very well with the grilled tilapia I served over it! The juices from the fish added a lot of flavor to the "riced" cauliflower - the "rice" is fluffy and mimics the real thing well enough, and it absorbs the flavor of whatever you mix with it. Nice dish and I will definitely make again - perhaps quicker and easier in a food processor, nonetheless doable by hand. But be warned: by itself or with just butter, it seems even more bland that regular steamed cauliflower - not enough texture to stand up as a solo dish."
