"I made these for work and everyone went crazy over them. They have a great old-fashioned shortbread taste, and the cookie as a whole is very original in flavor. The rolling/pressing is a little labor intensive, but I used my smallest cookie scoop then cut each "ball" in half to portion each cookie. I put a small amount of canola spray on one hand then rubbed my hands together and started rolling the dough into balls. Flattening with a fork was somewhat difficult as the dough wanted to stick to the fork, but I sprinkled the tops of the dough balls with a little sugar and flattened them with the bottom of a glass. Get them pretty flat so they'll make a nice sandwich once filled. The filling is awesome! Browning the butter is the key; do NOT think you can do it without that step. These cookies can be made, then frozen, then filled at a later date."
