"This dish is one that I will be making over and over. My husband gets this dish when we eat at the Indian restaurant. The recipe is very similar to the one he orders. Instead of the fresh tomatoes, I used one can of diced. I had to use my blender to mash the eggplant. I added the tomatoes to help the blender mash it. At the end of cooking, I added about a half cup of frozen peas like the dish at the restaurant. Used Naan to scoop it up.
Love it!!"
