I beat the egg whites,

"My dh loved this recipe and we enjoyed it the first time, however I prefer a chewier cookie, so last night I beat the egg whites first, then used powdered splenda just to coat the coconut. I bet I only used 1/2 cup. As the egg whites were mixed, I added the vanilla, then folded in dry ingredients. I baked them as directed but checked them every minute after 10...the result was a chewy, delicous, flavorful cookie. next time I'm going to try almond extract instead of vanilla."
