"This is a wonderful basic recipe. I added 1/2 cup toasted sliced almonds for crunch, 1 tsp. vanilla and 1/2 tsp. almond extracts for flavour and topped the cooled muffins with Philadelphia Pineapple Cream Cheese. This variation made a terrific "cupcake" with only one additional carb per muffin/cupcake from the single slightly rounded tsp. of creamed cheese on the top of each - my husband proclaimed them "delicious" and he is picky! Gotta love this recipe! M."
