Great - with a few alterations!,

"Just made this gravy and it tastes fabulous! I used shitaki mushrooms, caps only, from my farmers market. It was very difficult to get the flour completely dissolved. Next time I may remove the mushrooms and onions before adding the flour or else use Wondra flour. Also, the gravy was salty enough with only one tablespoon of soy sauce and no salt added at the end. As soon as it cools, it's going into the freezer for Thanksgiving. Thanks for the great vegan recipe."
