"Okay, so I found this recipe after searching for a way to use up some leftover sour cream in my fridge. Well, it turned into a whole "clean-out-the-fridge" event: I threw in some tomato, used imitation crabmeat instead of ham, and used all the shredded cheese I had. And that's what's wonderful about the recipe--it is so flexible, you can add your favorite omelet ingredients or just whatever you happen to have.
I am eating this right now and I cannot tell you how delicious it is. It's so filling; it tastes like a crustless quiche. I will have enough leftovers for five or six more meals throughout the week--I anticipate it will make a great quick breakfast. Thanks to the poster!"
