"Thank you for this recipe. I was wondering how to go about cooking a tenderloin cut that is 3" thick without cutting it.
Added fresh Onions and garlic to your rub recipe. It turned out very tender and moist, however I covered it with foil on a broiler pan and cooked for 45 mins then removed foil and cooked 15 mins more to crisp the outside."
