Mini or Maxi Quiche! I LOVE this recipe, March 25, 2008

"I printed the recipe to use for my daughter's graduation party, but simply didn't have the time. Since I love portabello mushrooms, and still had them on hand, I later took the ingredients and made them into a full sized quiche for dinner. I can't begin to describe how delicious it was. Since then I've also used the basics of this recipe to make quiche out of anything I have on hand. Any cheese works, sometimes I add ham, chicken, artichoke hearts, spinach, broccoli. Whatever. (Just be sure anything that was frozen is defrosted and precooked so it doesn't add water to the quiche as it cooks.)

I hosted a birthday party for my mom's 70th and finally made the mini quiches. They were delicious and everybody devoured them happily. They do freeze well, so it's nice to be able to make something for a party in advance.

I've made the full-sized quiche dozens of times now."
