I loved this but I had made changes,

"It was the first time I made this so I don't know what the original recipe tastes like but. . . I used fresh spinach and instead of just heating it I cooked it for a couple minutes in enough water to almost cover the spinach. I sprinkled the spinach with a bit of salt, lots of fresh mixed pepper and more than a pinch of nutmeg. I used one whole egg and 4 tbsp egg white. I added 1/8 cup black beans and let this cook (lid on). Being dairy allergic, I used vegan mozza flavoured cheese and chose not to let it melt. I also chopped up a 1" wedge from a medium sized tomato. Also, because I am new to the low carb diet and am reducing it slowly, I put everything in a whole wheat pita. It was delicious."
