"I now make these all the time and serve them instead of crackers with salad. You can add a pinch of cayenne pepper to the cheese or even chopped herbs. Be sure to leave them in the oven until you see a small amount of brown around the edges. You want them to be really crisp when they cool and they will taste slightly nutty. Yum."
