"Not a great recipe. The lead-in is also misleading. Buttermilk, especially churned butter milk (ie left over from making butter), is very low fat. All the fat is in the butter! Even cultured buttermilk is lowfat. The only reason to use soy milk is of course for a vegan version of the bread, not for a low fat version. If you are looking for a lowfat recipe, then buttermilk is ok to use and tastes better. Soymilk can have more fat than buttermilk. And unfortunately, the best soda breads need fat. Makes for a ironically lighter texture."
