A great soup!,

"I make this for my family at least monthly and more when the weather is rainy and cold! My husband is a vegetarian and we have 2 growing kids that are good eaters, and I have found this soup satisfies all!
The only changes I make:
* substitute organic chicken broth for the water sometimes (which my husband doesn't mind as long as I don't make him eat chicken)! It adds a fuller flavor.
* rosemary instead of basil just b/c I like it!
Really great recipe."
