Better than dairy alfredo!,

"My husband and I like to make eggplant "parmesan" and fettuccine "alfredo" using this recipe. It is a lot of work, so we don't make it often, but it is absolutely delicious! The consistency is great and the flavor is fantastic.
It is great to fix for our non-vegan friends and family when we have them over for dinner. They don't miss the dairy.
I would definitely recommend this recipe."
