"Wow, these are really, really good!! I used all ingredients as directed -- for the sweetener, though, I used about a dozen drops of Stevia extract (supplement section of most health food stores, zero carbs, all natural). I was disappointed at first when the batter looked skimpy but read the recipe again and continued to add water as Laura suggests. I think I added almost 1/2 cup of water but it looked right. These muffins are very tasty and very filling. Thank you so much for this recipe. I look forward to trying blueberries next!"
