"I made this soup about two years ago, not having any idea what to expect. It was wonderful!
Be forewarned that kabocha doesn't really taste like pumpkins we use here in the United States -- it has a slight melon-cucumber flavor, which is very good. The soup comes out with a potato soup texture, which is nice during cool weather.
If you have a heat-resistant blender, it may be easier for you to put the hot soup in the blender to do all your mashing. One caveat of this recipe: kabocha skin is REALLY tough! I ignored the microwaving step and really regretted it. I ended up washing a small hatchet to get the thing open (no joke!)"
