"This receipe looks kind of weird (sake and ketchup?!?) but it is the BOMB! Tobanjan can also be used for many other recipes like ma po tofu and steamed pork ribs so is worth investing in a bottle.
I don't think the sugar is strictly necessary as ketchup normally already has some. The amount of soup used could also be halved so that the last step adding the water and katakuriko can be omitted."
