Peanut Butter Pancakes and so much more!, September 28, 2008

"These are great! I have made the recipe as is and have also used the recipe as a template for other variations. For instance, I will add up to 1/2 c. peanut butter if I really want a peanut buttery pancake, but I will also increase the sugar too, usually up to 1/2c. The sugar tends to bring out more of the peanut butter flavor. I will also add 1-2 handfuls of chocolate chips. If you really feel like a treat though, go ahead and add 1/2 c cocoa powder, in addition to the increased peanut butter, sugar and chocolate chips. It's like a cake cookie and is delicious cold out of the refrigerator! Still, I continue to use this recipe as a base for other variations. I will add more milk (1 1/3 c.) and use 3/4-1 cup (sometimes more depending on your measuring) of flour with 1/2 c. quick oats to make oatmeal peanut butter pancakes. I have added 2 T milled flax seed as well as ww flour (I increase the leavening by adding 1 tsp soda when I use ww flour). I have used oil in place of the butter and have used different kinds of milk: rice, soy, chocolate milk, chocolate soy, all with great results. So go ahead and make the recipe as is or use it to be creative! Great, great recipe. The pancakes always turn out light and fluffy and always better than a pancake mix! Enjoy!!"
