"This was an easy and very tasty dish with a few minor alterations. I used chuck rather than round beef stew meat; I used diced canned tomatoes instead of tomato sauce; added 3 cloves of garlic (sliced); and didn't add the black-eyed peas until the last couple of hours of cooking. It was delicious served on a bed of brown rice. Thanks for the idea. This will be a staple item in my slow-cooking repertoire."
