"As far as I understand it... the chicken wings are cut at the joints and "double deep fried" They go in once, are taken out and seasoned again and then go back in. They should be crispy on the outside and slightly juicy on the inside. You should also be able to place one in your mouth and pull on the bones so that ALL the meat comes off in one bite.
This just can't be done with the method described in this recipe"
