"I was very worried when I started to make these cookies. Anything twice-baked seems to require more work for less than stellar results when I cook. However these cookies turned out so good, it almost looked like I knew what I was doing!
The recipe is easy enough, directions were easy to follow. The refrigeration of the dough helps out a lot, I didn't think the sticky dough would be workable, but it surely was after an hour in the fridge! Though it says to form into two 3x11 loaves, I think I got somewhere around 3x8. It still worked out, also a word of caution, don't make the loaves NEXT to each other on the same cookie sheet - use TWO cookie sheets. Don't make my mistake! These cookies spread out when baking and baked into each other. They easily came apart, but one of my loaves was lop-sided. Other than this, this is a keeper recipe. This Christmas I am making four batches of these to give to friends, they are very easy to make and look GREAT when you're done. I made around 20 cookies (smaller loaf = less cookies) ... and they were gone in the span of TWO DAYS. I think the only bad thing I can say about this recipe is probably the vast amount of weight I'm going to gain from these yummy cookays!"
