"My wife found my balsamic recipe far too vinegary...after a quick search I found this, and it's terrific. I wasn't sure of the writer's intent as far as when to add the vinegar, so I had my wedges in the oil on medium for a good 30 minutes til I was happy with the color of them, then dropped my vinegar right into the pan, the potato's became slightly more moist, but retained some crunch, and had the perfect zing from the vinegar, like a salt and vinegar chip. Great and easy! :)"
