"I followed the recipe and everything came out very well!
The unexpected switness of the fruits is countered by the sage and the parmesan cheese to give it a very pleasant surprise for your tastes.
I prepared this dish a couple of months ago for some friends and I am planning to make it again tomorrow for some other friends.
Be careful with the temps when checking for done-ness, take indeed multiple measurements and do trust the lowest one. It happened that I had a spot where the pork was rare.
