Shortbread lacking in Scottishness,

"The absence of one fourth Rice Flour, Castor Sugar and Salted Butter causes this recipe to be more of a gritty plain cookie than a Rich Scottish Shortbread, Creaming salted butter with castor sugar and adding mixed sifted flours by the spoon then leaving in the fridge overnight before placing in a 325f oven for forty minutes would have raised the Shortbread to five stars."
