Strawberry heaven,

"Wow - these are scrumptious. However, my first thought was, "Should I just make them with lemon zest instead?" I decided to follow the recipe and was very pleased with the results. The ricotta makes the muffins moist and dense. They are so wonderful that you will have a hard time sharing them with others!"
