Mediterranean Port Roast - EASY! AND VERY GOOD!,

"Don't try this recipe without a meat thermometer. You'll never know whether you've cooked it long enough or not. (My oven required 75 minutes to get the meat to 145 degrees)
That said, the roast came out juicy and flavorful and I will definitely be making it again."
