Gotta use SPAM, August 3, 2009

"I think when she said to use pork, she should have specified to use SPAM. For some reason spam is a delicacy on small islands like Hawaii, Guam, and Okinawa. They even come in nice gift boxes you can give for christmas, don't ask why. This really helps with the bitter taste people complain about.

Also, slice goya very thin after removing the seeds and take some salt and kneed it into the sliced goya. Let it sit for about 10 to 15 minutes and then rinse thoroughly. This will remove much of the bitterness. Make sure you rinse it well or the chanpuru will be a bit salty."
