My take on Tofu & Cashew Chow Mein, September 4, 2009

"As Rhonda is likely aware, I cannot leave a recipe alone! But the changes made in this recipe were by necessity, as I found too late that I didn't have edible broccoli! So that change was to green pepper strips. One other change was using wide rice noodles rather than wheat, as I was out of thick flour noodles, nor did I have time to make them as I usually do. Other than that, I went with the rest of it, and added baby corn as well.
This was an interesting dish, Marie who is my critic was quite happy with it. When I do this again, I will ensure that I do make wheat noodles, and use them. I served this with a Thai seafood curry using prawns and scallops....mmmgood!"
