"I'm still learning how to cook, and even though this is an easy recipe with minimal ingredients, it's taken me several times to get this just right. Most recently, I let it overcook, instead of only cooking it 1 hr, I cooked it for 1.5 hours and almost burned it. I think though, in the future, I will add 15 mins more cooking time to the 1 hr because at 1.5 hrs, all the water was turned into the anko paste, and that way, there's no draining. Also, I will stir it once or twice throughout that 1:15. Definitely use white granulated sugar, not brown (or succinate). It tasted really weird with the organic succinate sugar I used once. I also don't add as much sugar as recommended. I probably add just shy of 1 cup, and it's sweet enough for me. I love it, love it, love it though!"
