"fish stock is not "fumet", it is fond de poisson. This recipe is for a fumet, but it is mislabeled. No point in wasting cheesecloth on a sachet either, since it is being strained. Use a bulk sachet, and keep the cheesecloth for your aromatics in some sauce that you don't have to strain."
