What happened?,

"I made this recipe tonight and the Qatayef came out far too thick and the cooked side was not done properly, too hard and dry. I added a little oil and lots more water and it came out a little better but not good enough for me to serve. I followed the recipe exactly. What should I do next time? I won't make it again unless I get some guidance on how to get it the right consistency."
