Delicious! Could be even healthier, December 26, 2007

"Delicious! Fruit flavors are so fun to experiment with when cutting the fat in a recipe. I actually halved the fat further by reducing the butter to 2 tablespoons, and using two egg whites plus one whole egg instead of two whole eggs, and it was still delicious. I wonder if one could use heart-healthy canola oil instead of butter? The recipe makes 3 mini-loaves if you're using small pans."
