"This is a really, delicious banana bread - as close to none-gf as you'll ever taste. Great taste and texture.
I switched out the tapioca starch for potato starch, because I try not to eat any goitrogenic foods (tapioca is made from Cassava). I loved that it had the very high protein flour amaranth in it, and sorgum too. I don't like to be just eating empty calories when I'm making a dessert.
Also it was very easy to make. Thank you for something I'm proud to add to my repertoire"
