"First thing: One of the reviews mentioned that they believed that adding salt to the powdered sugar that you roll the cookie in was a mistake. THIS IS NOT A MISTAKE! Salt enhances the flavor of what ever you add it to and the author of this recipe intended that you add salt to the powdered sugar; that is what makes this recipe stand out from all the others you may find anywhere. The salt added to the powdered sugar gives this cookie that extra special flavor that makes this cookie a perfect blend of sweet and salty, nutty, melt in your mouth goodness. DO NOT eliminate the salt in the powdered sugar that you roll the cookie in and your cookies will be way better than anyone else's Mexican Wedding Cakes. In fact, I doubled the amount of salt and sugar and rolled my cookies twice, once while they were warm and then again after they had cooled and the cookies were completely gobbled up by everyone at work and everyone said that these were the best they had ever had. The secret is the addition of the salt at the end. Seriously...go look at all the other recipes out there; very few, if any, call for the addition of salt in the rolling sugar and that is precisely what sets this one apart. What I do is to run the salt and sugar through a sifter a couple of times and blend it all nicely but you don't even have to do that if you mix it well. You will love this recipe! Trust me; I am a pastry chef and this recipe is perfection. Thank you very much for getting this recipe on the web. You rock! My Grandmother would be envious! Thank you!"
