Easy Authentic and Delicious!,

"This dish was easy to make and a huge hit with my co-workers (we have an office lunch club).
Very flavorful, colorful and according to my Asian friends -- very authentic.
The only changes I made were to use all dark soy sauce and I also added 3 finely diced Thai Peppers when I cooked the eggplant."
