"I chose this recipe to use up some leftover ingredients, and so made it with standard Arborio rice and spicier sausage than was probably intended. The leek I had was very large, which was fine. Next time I won't cook the leek for quite as long before adding the sausage (mine scorched a bit) and I'll cut back to 5 or 6T of butter, more to ease my dietary conscience than for any gustatory reason. My wife and I liked this very much."
