Great dipping sauce!,

"This was an excellent dipping sauce! I suspect the complaints about the "sourness" arise from the substitute of red wine vinegar or white vinegar, for Chinese or Japanese rice wine vinegar, the latter being "sweet" rather than sour. Can't do that! Completely different products.Thanks."
