"This is really good. I made it as a part of a "Spanish Night" I put together for my bf. I did the eggplant the night before and actually used balsamic vinegar instead of the sherry vinegar and it was delicious. My bf is a meat eater and loves my cooking and I made meatballs, shrimp, ceviche...and THIS was his favorite dish of all. I highly recommend making it the night before because it allows the vinaigrette to marinate the eggplant. Definitely let warm to room temp before serving because the flavors just burst. Yum! I am making it again this weekend."
