Great healthy Dutch bread,

"Being Dutch I miss good healthy Dutch bread. Living in the USA offers much in terms of food, don't get me wrong. But there is always too much sugar or fat for me, so I crave for good Dutch bread.
And here it is ... a dream coming true. Hartog happened to be one of my favourite bakeries when I lived in Amsterdam so I was cheering out loud when I saw Karin put the recipe on the site.
Made it exactly according to the recipe a couple of days ago.
Although my bread did not rise as much as it should have, it was still the same texture and flavour as Hartog's bread had. Thrilled !!
It's a great bread, of course wonderful when it just comes out of the oven with a bit of Irish butter and Dutch cheese (Old Amsterdam from Costco). Even after a couple of days it's still good, it keeps the flavour, it does not fall apart, it's great.
Dough is temperamental and doesn't like the tiniest of draft, so that may have caused the 80% rise. Today I used the trick that I always use with my other bread and will see whether that works: I preheat my oven and for a couple of minutes and switch it off, to let it cool down till it has reached 30C temperature.
It's rising now and I have the feeling that today I will reached the desired height in bread.
Thanks so much for sharing this recipe, it will be on my menu every week from now on. No more store bought wholewheat bread for us, only the good stuff !!
I can recommend anybody who loves good bread to make this.
In fact: this is one of the easiest bread recipes I have come across in a very long time. Don't let the three times rising put you off, it goes quick and it's not a lot of work."
