"I am really unfamiliar with Moroccan food but it seemed to be the first non-sweet way of fixing carrots. The ageing process has forced me to be careful of foods we consume, so I am trying some unfamiliar things. I stirfried the carrot coins rather than boiling and I did reduce a touch of orange juice and added garlic and greek olives to the final toss. I have struggled with couscous to fix in a manner that we will eat, and I think this will be wonderful with that. I found the flavor of the finished result wonderful. I can hardly wait for garden fresh carrots here in Montana.
Also think a bit of feta cheese sprinkled over the top would be a nice variation."
