"I was first introduced to okonomiyaki in Nagoya in 1950. It has always been one of my favorite dishes and I think this recipe is right on. The only change I would suggest is to make adding mayonnaise an optional choice. Try it both ways. It has always been my preference to use lots of soy sauce and no mayonnaise. As one of the old timers from Nagoya I will always remember it as "monjiyaki." Few people these days recall that name. Whatever you may call it this recipe is perfect and the results were just as I expected."
