"This has been a staple of our family for generations......however, Mom would add sliced celery and always some fresh mint from the garden.....the coolness and fresh taste of the mint and the celery is awesome. Also, the olive oil should be q.b. quanto basta..as needed since it depends on how much it will take to cover the vegetables.....I have experimented with processing and it worked fine....although the eggplant might become a little soft it was worth having them later in the season than normal.
